Elon Description
Heat oven to 400°f.
Lightly oil a deep casserole dish, or oven-safe dutch oven.
Evenly layer the following in a casserole dish or oven safe dutch oven:
4 to 6 Peeled, Sliced Potatoes
2 small Sliced Onions, rings separated
2 to 3 sliced or chunky Smoked or Polish Sausage Links
(Hillshire Farms, Earl Campbell, or other good brand link sausage)
Salt and Pepper to taste
1/4 cup Corn Oil
1/4 cup Water
This can be layered or mixed, it doesn't matter. Sprinkle on the salt and pepper, then pour over that the oil and water. Cover with a lid or with foil.
Bake at 400°f for an hour, or until the tops have just turned toasty brown, and the potatoes and onions are done through.
Allow to cool covered about 10 minutes before serving. Can adjust the amount of any of these ingredients to suit preferences.
Years ago, when I made this for a French Canadian friend, he was in tears as he told me it was exactly as his mother and grandmother made for him in France many years ago. Apparently he hadn't had it in decades.
